What We Believe
- A pizza oven is a heat machine. Everything else - the dough, the sauce, the cheese - is just there to not get in its way.
- The first pizza you make in a new oven will be bad. Plan for it. The second one tells you what you bought.
- A 12-inch oven that hits 900F beats a 16-inch oven that struggles past 700F. Temperature range is the spec that matters.
- Wood tastes better, gas is easier, and electric makes sense indoors. The right answer depends on the night, not the brand.
